I created Part-Time Vegan because for years, I struggled with my health, and I was overwhelmed by trying to figure how to transition to a healthier, more plant based diet.
As a former sports marketing executive, I know what it's like to juggle a busy schedule and try to take care of yourself. For years, I worked crazy hours, and lived on arena hot dogs, pizza and Diet Coke.
I didn't yet realize how my lifestyle choices were affecting my health, and I struggled with migraines, acne, gallbladder pain, irritable bowel syndrome, high cholesterol and pre-diabetes.
Eventually, I also experienced multiple miscarriages and infertility.
Fortunately, I was able to give birth to our son right after I turned 40.
Right then, I vowed to take better care of myself. As an "older" mom, I realized I needed to make my health a priority if I wanted to live the longest, healthiest life possible.
So, I started making small changes, trying new foods, and allowing myself to make mistakes along the way.
Through nutrition and lifestyle choices, I was able to resolve my health issues such as migraines and high cholesterol. In addition, I feel much more energized and empowered than I did when I was eating processed foods and neglecting self care.
Over the years, I became a certified health coach, and earned my certificate in plant-based nutrition from the T. Colin Campbell Center for Nutrition Studies and eCornell. I'm also on television, as the Healthy Eating Expert on KPTV here in Portland, OR.
Today, I love taking what I've learned over the years, and helping others supercharge their health through coaching, recipes and my signature course, Part-Time Vegan.
